Slummus

Well for starters, I had Socca again yesterday and I'll be having it today too.

YUM



Had I been thinking I'd have made myself some Socca for the late night snacking my internal clock is set for. Instead I had cereal (twice), Peanut Butter and Almond Butter. YES, I did. On Sunday my Brother in Law's Sister was telling us how her Son recently started waking up in the middle of the night. Now everynight like clock work he shows up beside their bed at almost exactly 3:41. It only takes a couple times before it's a habit. Since I like to keep things spicy I show up at the kitchen table anywhere between 12 and 2 o'clock.

What else...

Last night I attempted to make Hummus, if you can even call it that. I probably shouldn't call it that and defame Hummus everywhere. There were no recipes used and I believe the only correct ingredients involved were Chickpeas. I tossed a can (540 ml) of Chickpeas into the food processor along with 1/4 cup of Almond Butter and 1/3 cup of Almond Milk. Since I planned on pouring Strawberry Vinaigrette over it I figured I didn't want to make it lemony by adding lemon. Looking back that doesn't make much sense since they're both fruit.



Tah DUH.. Blended Chickpeas, Almond Butter and Almond Milk.. Call it what you want..



Slop? Slummus?



What happened next I don't recommend. I tossed half of a Cauliflower head in the food processor making "Cauliflower Rice". I needed a base for my Slummus.



Then I saw Kale in the fridge and decided to sautee it, "I'm going to have TWO bases". The finished product looked like this....


Plain sauteed Kale, Cauliflower Rice, Slummus and Strawberry Vinaigrette.

Now I'd like to sit here and tell you to make this, but I like you guys. Plain sauteed Kale tastes like leaves. Cauliflower Rice does NOT compliment sweet Slummus or leaves. And my Strawberry Vinaigrette is from Phoenix and deserves more than a combination like this.

The Slummus is pretty good, but I should have committed to making SWEET Hummus and added some Stevia and Cinnamon. Had I done that (or even as is) it would be AMAZING on toast, a wrap, fruit, etc..

My Man's supper was a WINNER though..



Side Note: Cauliflower Rice stinks and the taste isn't worth listening to your Man walk around saying, "It smells like garbage in here. What smells like garbage? Do you smell that?" I told him last night it was the Cauliflower, I told him this morning it was the Cauliflower and I'll be telling him at lunch it's the CAULIFLOWER.
