It’s the beginning of a new month and I feel like a CHALLENGE.
I’ve never been a fan of salads and I’ve been trying to incorporate them lately. They are a great way to get a lot of different color (veggies) in one meal. I’ve also found that I feel really good on days that I pack a salad for lunch. I can eat it, feel full but not tired and I’m always ready for a snack later in the afternoon. Who wants to make March a Salad Challenge? For the next 31 days you have to replace one meal per day with a salad BEAST.

Here are the RULES, each salad should contain:
1. A protein
2. Two different veggies
3. Weeds or Spinach
4. This one’s optional, a nut or fruit
Someone Join me, otherwise I won’t do it!!! We’ll start an exclusive SALAD club. If you’re on board, leave me a comment or fire me an email at email@example.com . If no one comments I will be forced to make anonymous postings on my own blog so it would appear as though I have friends (Mel you are obligated to do the Challenge). I’m not in LOVE with salads so this is going to be a challenge. I’ll be tossing sweet potatoes and squash (ketchup)in mine for sure.
If I haven’t convinced you yet, you should also know that since I’ve started eating more veggies (I hardly ate any before) my skin looks WAY better. It’s clearer and actually has a glow. Convinced yet?
I might also challenge myself to quit late night feasting, but I can’t make that sort of commitment until 12:30 tonight. I’ll let keep you posted.
