I came home for Muscle Food and the Magic Bullet was nowhere to be found. I could only think of two things that could have happened to it. One, Bailey was dieseling protein shakes last night and then hid the cup. Two, My Man took it somewhere and it was now rolling around on his car floor. Either way I had to mix my shake the old fashion way, hand and spoon. Although fast, I unfortunately did not reach magic bullet speed.

Familiar? I threw everything on a pan and cooked it EXCEPT the weeds. Amy's Burger, Mushrooms, Broccoli and Cheezy Sauce (2 Tbsp Hummus, 2 Tbsp Nutritional Yeast).

Lotus Root baked with Cinnamon and one fig all topped with PB and Cashew Butter. This was my first time trying Lotus Root and I liked it. It comes looking kind of like a potato so I peeled it, sliced it and sprinkled it with cinnamon. I popped it in the over at 400 for about 10 minutes flipping it half way through. Verdict? pretty solid middle man for my Nut Butters.
What is Lotus Root?
According to Wisegeek.com (what a great site name, who wouldn't trust a wise geek?), "The lotus root is a root vegetable that is indigenous to Asia, and is found underwater. Similar in shape to a long squash, it is not uncommon for lotus roots to grow to a length of four feet. The exterior of this root is covered with a peel that is a reddish brown color in appearance, with a white interior that has the appearance of lace. The meat of the lotus root has a texture that is slightly crunchy, and mildly sweet."
What are it's health benefits?
Lotus roots have been found to be rich in dietary fiber, vitamin C, potassium, thiamin, riboflavin, vitamin B6, phosphorus, copper, and manganese (whatever that is).
Where did I find Lotus Root?
An Asian Supermarket downtown. I must have REALLY wanted it because it was in a rundown sketchy area of town. I ran in and out so fast I almost forgot to pay.
I've been super busy this last week which would explain the lack of creativity in the food department. Last night was our store's Grand Opening and Fashion Show! So here is the rest of my night in pictures..
